Vegan Jambalaya.

Instead of cooking the rice separately, I cooked the rice in the sauce. I thought the recipe needed a little bit more salt, so I added extra salt and kept stirring. Please keep in mind that this recipe syas it took 40 minutes, but it took me a little over an hour from prepping all the veggies. My end product didn't exactly look as pictured, but it was still very tasty. My carnivore parents still loved it.


Vegan Enchiladas

We had no black beans, so I substituted the black beans for chickpeas. This isn't a normal substitution, but it was really quite good. Instead of cooking the chickpeas separately, I cooked them in the same pan of sweet potato and just cooked them with olive oil. I could've preferred double the amount of sauce. My sauce wasn't nearly enough and didn't even cover the bottom of the baking dish. I just ended up using tomato sauce for the rest of the sauce for the enchiladas, a bold move, but it was very good.I brought my enchilada to the Super Bowl party so that I wouldn't be tempted by the delicious chik-fil-a nuggets that were being served.


Vegan Quinoa Chili

This was so, so, good. It took a little over an hour to make. I have started adding about 30 minutes to these 'cook times' because my meals seem to take longer. I did forget to cook the beans and the quinoa before starting the meal. I would suggest you do not do that. Definitely look through the recipe and see what cooked ingredients there are before you actually start cooking. Rookie mistake.I found that the chili needed a lot more salt. It called for virtually none. Next time, I would add some soy sauce to the dish to give it some sodium. This was a very simple meal to make and I really enjoyed it. I didn't make the sour cream because I could not find tofu at the grocery store to save my life.


Vegan Mint Chocolate Ice Cream

So, I don't have an ice cream maker, so I did that whole put-it-in-the-freezer-and-take-it-out thing. Online it says 2-3 hours, but after 4-5 hours mine still wasn't ready. I thought that the serving it makes is not a lot, so I made makeshift 'vanilla' ice cream and added it to the mint mix. To make the vanilla, I used the same amount of coconut milk, water, and then added vanilla extract. I mixed the two mixes together before putting them in a container to freeze. The ice cream wasn't ready before I went to sleep, so I left it in over night.
